Northern California Culinary Veteran Debuts New Seasonal Menu at historic Hilltop 1892

Novato, CA (February 18, 2014)…The new year has brought a distinguished chef and his signature menu to Hilltop 1892, Novato’s famed dining house atop “Hayden Hill.”  Executive Chef Todd Davies, a Novato resident, is rolling out his menu featuring his take on Northern California’s seasonal bounty.  With Chef Davies and his menu comes an outstanding wine list, a fun casual atmosphere and fantastic views, making Hilltop 1892 the obvious choice for locals and visitors alike.

A longtime veteran of Northern California’s culinary scene, Chef Davies brings the ideal blend of experience and enthusiasm to create Hilltop 1892’s seasonal menus.  His passion for Northern California’s food and wine environment and his exceptional culinary talents, which were honed in the kitchens of some of America’s most renowned chefs, will inspire Davies to create dishes that showcase regional flavors.

“I am thrilled to be back in Marin County, which is the heart of what I consider one of the greatest food and wine environments in the world,” said Davies. “My passion for everything culinary is inspired by this region, and I am thrilled to share this passion with our guests at Hilltop.”

A native of Boise, Idaho, Davies graduated from the Culinary Institute of America and went to work for Charlie Palmer and David Burke in New York.  He came west in 1993 to work as an Executive Chef at the Flying Saucer and then then joined Jeremiah Tower to open two restaurants.

In 1996, Davies became Partner/Executive Chef at Bradley Ogden’s Lark Creek Inn where he was named by the San Francisco Examiner as one of the “Bay Area’s Top Ten Up-and-Coming Chefs.”  He was at Lark Creek Inn during its heyday, helping to perfect the world famous Butterscotch Pudding.  Most recently, Davies was the Executive Chef at Corks at the Russian River Vineyards.

Hilltop’s new menu items include some of Chef Davies favorites such as Hilltop Meatloaf served with whipped potatoes, garlic green beans and Mom’s meatloaf sauce.  Recreating one of his favorite dishes, Davies is serving Carlsbad Mussels with Zoey’s Caggiano Sausage, Dutton Ranch Chardonnay and tomato broth.  Other entrees include local Devil’s Gulch Ranch Pork Chop with dried apricot chutney, grilled radicchio and gigante beans, Cedar Plank Loch Duart Salmon with Hon Shimeji mushrooms, pea shoots and curry squash inspired by Davies’ experience as a salmon fisherman in Alaska; and Hefeweizen Beer Braised Pot Roast with caraway mash, peas and carrots.

For sweet treats, Davies has revisited the famous Butterscotch Pudding from Lark Creek Inn, and created a new inception of the recipe that is bound to delight.  He has also developed a Guittard Chocolate Bread Pudding served with raisins, caramel sauce and crème amglaise featuring the Bay Area’s Guittard chocolate, the only French-style manufacturer of chocolate in the United States.

For perfect pairings, Hilltop 1892 offers a wide selection of cellared wines which emphasizes wines and grape-growers from the surrounding Napa and Sonoma counties, including the Hendricks’ family own Rockin’ H Ranch.  Located along the Petaluma River, Rockin’ H Ranch produces some of California’s finest Rhone Style varietals that are used by some of California’s finest wineries including Elizabeth Spencer, Hart’s Desire and Bouchaine.

The exceptional menu and wine list is enhanced by the panoramic views from the hills of West Marin to the Bay coastline of Sonoma County.  Every seat in the restaurant as well as the custom Craftsman-style bar enjoys beautiful views. At night, Hilltop 1892 is proudly lit-up with hundreds of miniature lights – a cheerful and welcoming sight from Highway 101.
