Chef Mario Bonilla has been enjoying the art of cooking his entire life.
Early on he began cooking with Hugh Carpenter at Cal-Asia in Mill Valley.
Then attended the Culinary Academy at LeCordon Rouge.
After graduating he moved to New Orleans and did an apprenticeship with Emeril Lagasse at Nola’s Restaurant in the famous French Quarter district.
A few years later he worked under Chef Carl Walker at Brennan’s in Houston.
Chef Mario returned to his beloved Marin County as the Chef at the Southern inspired restaurant Mudbugs in Mill Valley.
Today he is brings his years of experience and creativity to the menu at The Hilltop.
